Champurrado Mexican Hot Chocolate

Champurrado or mexican hot chocolate


what you will need for this :

4 cups whole milk
8 cups water
2 sticks of cinnamon
one and a half disks of la abuelas chocolate 
1 1/2 cup brown sugar 
1 1/2 cup maseca 
vanilla


in a pot bring the 8 cups of water to a boil with the cinnamon disks of chocolate and brown sugar 

while thats coming to a boil in the blender add the 4 cups of milk and the 1 1/2 cups of maseca blend till smooth then you will strain over the pot add a few drops of vanilla or to your liking now from this point you need to continue to stir on a med high heat till its completely smooth and to a thickened consistency   

done now enjoy with some cookies or pan dulce

WHAT YOU WILL NEED:

For this you can use several cuts of pork one or all
*pig head 
*pork butt
*pork pinic roast 
*pig feet

on this day i used picnic roast .. 

one to two cans of maiz 
3 garlic cloves 
15-20 chiles guajillo (any hispanic isle will have them)
tomillo (thyme) i do not measure but id say three tblspns of each spice
oregano
bay leaves 4 
salt
limes 
whole onion
raddish and cabbage for garnish as well as cilantro and onion
first you want to wash your meat and then chop it up to bite size pieces add to the pot then add the spices to the pot as well as half of onion i use white 

in a sperate pan boil the chiles when soft about 15 mins add to the blender with the other half of the onion and the 3 cloves of garlic blend well then strain over pot when meats almost done add the can of the maiz 

serve with chips or tostadas lime wedges 
cabbage onion and raddish 

enjoy !

Caldo de Pollo (chicken soup)


WHAT YOU WILL NEED:
On this day i used a whole chicken just cut up you can use legs breast thigh what ever to your liking 

knorr caldo de pollo or chicken boullion cubes
carrots
corn
squash or zuccini
cilantro
limes
garlic cloves 2
onion
potatoes
green beans

To start go ahead and boil your chicken with half onion and two cloves of garlic corn carrots green beans when almost cooked add the potatoes cook till soft 
now you can add the seasoning to taste 
serve with cilantro for garnish as well as diced onion and lime wedges

easy pasta dish with penne

what you will need :

italian sausage
3 garlic cloves
2 cans diced tomatoes
fresh spinach
fresh parmesean
onion
salt
pepper
red pepper flakes
penne pasta 1 box

first get your water boiling then add salt and penne while its cooking in a frying pan add a dash of oil and remove the sausage from its casing and once its all in the pan (i used 6) break it up in the pan with the back of the spoon add salt pepper and pepper flakes when completly cooked move to bowl leaving the oil in the pan nowmince your garlic and dice up a onion add once the garlic lets off ots aroma add in the canned tomatoes and spinach fill it full as it wilts down add in the sausage and strain the cooked penne add in as well top with fresh cheese and enjoy with a hard roll and salad

enchiladasagna with chile verde

what you will need :

tortillas i did 6 layers 6 each layer
oil to fry
onion for salsa and for filling
chicken breast (cooked)
green tomatoes 6
jalapenos 3
one garlic clove
cooking spray
caldo de pollo chicken buillon

first you want to boil your chicken breast and cool then shredd
as thats cooking you can start frying all the tortillas in a frying pan with oil i use a larger skillet and fry 4 at a time we want these golden when as thats going in a sauce pan boil the tomatoes and jalapeno when they have changed in color and are soft blend them with one garlic and a chunk of onion and to your liking caldo de pollo (will be pictured for clarification) set aside till everythings ready
now you need a baking dish spray with cooking spray add some of the sauce and add to rows of three then the dixed onion and chicken filler then cheese (shredded mozarella) sauce then repeat till pan is full now you cover with foil and bake at 350 for 30 to 40 mins
you can add a spoon of sourcream when served to each piece enjoy !

Easy Banana Recipe

what you will need:

3 ripe bananas
1 cup sugar
1 tblspn milk
1 stick butter
2 cups all purpose flour
1 tspn salt
1 tspn baking powder
1 tspn baking soda
2 eggs
cinnamon to your liking i dont measure
vanilla to your liking
9x13 pan
cooking spray or butter to grease pan

first preheat the oven to 325 we will bake for 60-70 mins depending if its done

first we want to cream the butter and sugar once creamed together add our eggs one at a time stirring in in seperate bowl mix all your dry ingriedients and now we will mash our bananas in a bowl then add to the butter mixture milk dry mix well then spray pan and bake for hour to hour ten minutes at hour check with a tooth pick if it comes out clean its done if not go the extra ten

Enchiladas (flour tortilla)

what you will need:

8to10 chile guajillo
1 garlic clove
1 clove
quarter of onion
dash of cumin ( comino molido)
dash of thyme (tomillo)
knorr caldo de pollo
flour tortilla
oil
onion
shredded chicken
shredded lettuce
cheese i used fresco
sour cream

first you want to take your chiles
place them in a pot covered with water
boil till soft add to blender with bout
a cup to a cup and a half of the water
add onion garlic clove comino tomillo
and about


2tspn caldo de pollo

or to your liking now blend till smooth
now grab a large skillet add a dash of oil
heat till hot over a medhigh heat strain sauce into dkillet taste for salt

heat up your tortilla run through sauce stuff witb shredded chicken diced onion
roll and place in a baking dish when all enchiladas are done pour any excess sauce over them top with cheese of your liking tent with foil heat in a 350 degree oven when cheese is melted serve topped with lettuce onion cheese n cream

Tacos de Papa (potato tacos)

what you will need:

potatoes (in this case i used golden)
tortillas
oil
salt
for your toppings :
lettuce
queso cotija
sour cream
onion
salsa (verde)

first you want to wash your potatoes
then place them in a large pot to boil
add salt for taste
when done (fork pokes through easily)
drain let cool but not completly we are going to peel them just by pulling off the skin its very easy ( or skip this and prepeel)
add all our potatoes to a large mixing bowl
now we are going to smash them up add salt and pepper to taste now we are going to add a small ammountof cheese now as well
go ahead and heat up your tortillas either stove top or microchef ;)
when hot add a spoonful of potato when all your tacos are formed heat a small ammount of oil in a large skillet n begin to fry flipping once we want a nice crunchy golden taco :)
set to cool on paper towel to absorb excess oil


top:
here you can add your shredded lettuce some diced onion sour cream and salsa and to top it all off cheese now enjoy :)

Easy Cake Pops!

what you will need :


one boxed cake mix of your preferance i used red velvet
one container frosting i used vanilla
candy melts
sprinkles
sticks


first you want to go ahead and bake your cake following directions on the box when completly cool we want to grab a large mixing bowl to crumble our whole cake into easiest way is to grab to parts and rub them together as if grating it we want small crumbs no chunks when your whole cake is crumbled go ahead and add a little more than half of the frosting and mix mix mix till you have a thick dough consistancy now you begin rolling out your balls and set on a cookie sheet

now you want to melt down your candy melts i found if you add a tspn of shortening it gives it a perfect consistancy once thats melted down and all your balls are formed grab you sticks dip the tip in the melts then about halfway into the cake pop continue with all and set in the freezer about 20 minutes





now we are going to run them through the melts then sprinkle and let set i set mine in the fridge and tada !!! a great treat for a special occasion or any time lol enjoy :)
